Meghli
Ingredients:
1 lb. powdered rice
5 oz. ground caraway
2 1/5 lbs. sugar
1 1/2 oz. fennel, ground
1 oz. ground anis
1 oz. ground cinnamon (optional)
8 pts. 15 oz. water
Large quantity of nuts-almonds, pine nuts, walnuts, pistachio
all ready for garnishing (See No. 386 Boiling and Blanching
Nuts)
Method:
Put water to boil in a large pot. Dissolve powdered rice in
some cold water and add it to the boiling water, stirring
all the while. Add all the spices and continue to stir.
Add
sugar and keep stirring. This should cook over high heat till
it is done. Pour into individual dessert plates or custard
cups and let cool. Cover top with blanched nuts.
