Manouchi b Zaatar (Manoush Herb rounds)
Makes: 8 rounds
Cooking time: 10 - 15 minutes per batch
2lb (1 kg) Lebanese Bread dough (see recipe)
3/4 cup olive or nut oil
3/4 cup Zaatar Mixture (see recipe)
When the bread dough has risen, punch it down and knead again for 2 minutes. Divide it into 8 equal portions and roll each portion into a ball.
Flatten the dough balls on a floured cloth and with a rolling pin roll into little rounds about the size of a small bread and butter plate and 1/2 in (1.25 cm) thick. Place bread rounds on a lightly floured cloth, cover with another floured cloth and set aside to rise to nearly double their size - 20 - 30 minutes. Make indents in the rounds by prodding with the finger. Pour oil over the surface and sprinkle liberally with Zaatar Mixture.
Bake in a very hot oven, 500' F (240' C) until cooked - approx 10 - 15 minutes.
These rounds should be very soft in texture so they can be eaten either rolled up or turn into pieces.
